Zucchini Pasta Salad with Smoked Salmon & Peas

  • green peas

  • plain, fat free greek yogurt

  • olive oil

  • salt and pepper

  • shallots

  • smoked salmon

  • vegetable broth

  • dijon mustard

  • medium zucchini

  1. Place a large pan over medium heat and add in the oil. Once the oil heats, add in the shallots. Cook for about two minutes or until they soften.

  2. Add in vegetable broth. Cook until broth reduces.

  3. Add in the dijon mustard, stir to combine and then add in the Greek yogurt. Stir until creamy, season with salt and pepper.

  4. Cook the zucchini noodles, then add to dijon and yogourt dressing, toss the noodles to combine and coat with the dressing.

  5. Add in the peas and smoked salmon, toss to combine.
