Tuna Macaroni Salad

  • tuna

  • celery

  • elbow macaroni

  • fresh parsley

  • green onion

  • lemon juice

  • lettuce

  • sweet paprika

  • bell peppers

  1. In a saucepan, add elbow macaroni to boiling water with some added salt. Simmer with covered or uncovered for about 10 minutes until the macaroni is cooked. When ready, remove from heat, drain and rinse with cold water.

  2. While the macaroni is cooking, assemble the other ingredients. In a large bowl mix the green onion, bell peppers, parsley, tuna, celery and lemon.

  3. Add the cooked and drained macaroni.

  4. Fold in the lettuce and mayonnaise until well mixed.

  5. Add the paprika

  6. Add fresh ground pepper.

  7. note: keep lettuce separate if you want to meal prep this. If it's all sitting together for too long, the lettuce will get soggy.
