Tofu & Asparagus Lentil Bowl

  • red lentils

  • asparagus

  • extra firm tofu

  • broccoli

  • olive oil

  • salt

  • pepper

  • garlic powder

  1. Cook red lentils according to package instructions

  2. Season asparagus and broccoli with salt, pepper, and galic powder

  3. Spray pan with cooking spray, add tofu slices and olive oil. Can add seasonings as well - Mango Chipotle (pictured with other seasonings in this book) would taste great!

  4. Once everything is cooked, combine in a bowl. Enjoy!
