Edamame Salad

  • edamame

  • corn kernels

  • red onion

  • red pepper

  • olive oil

  • red wine vinegar

  • cilantro

  • salt

  • black pepper

  • lime juice

  1. Cook edamame. My preferred method is using frozen edamame and microwaving it (what a surprise!)

  2. I recommend using frozen corn kernels as well so they can be cooked the same way

  3. Chop red pepper and onions, combine with edamame and corn

  4. Combine red wine vinegar, lime juice, olive oil, cilantro, salt, and black pepper. Mix well. Pour on top of salad. Can add extra cilantro as a garnish if you like! The salad tastes great chilled but tastes good both ways.
