Edamame Salad

edamame

corn kernels
-
red onion
-
red pepper

olive oil

red wine vinegar

cilantro

salt

black pepper

Cook edamame. My preferred method is using frozen edamame and microwaving it (what a surprise!)

I recommend using frozen corn kernels as well so they can be cooked the same way

Chop red pepper and onions, combine with edamame and corn
-
Combine red wine vinegar, lime juice, olive oil, cilantro, salt, and black pepper. Mix well. Pour on top of salad. Can add extra cilantro as a garnish if you like! The salad tastes great chilled but tastes good both ways.
