Chickpea Scramble

  • canned chickpeas

  • nutritional yeast

  • tomato

  • red pepper

  • onion

  • lemon juice

  • garlic powder

  • turmeric powder

  • salt

  • pepper

  1. Add the chickpeas and the lemon juice to a mixing bowl and mash them with a fork.

  2. Add the spices, mash again until well combined.

  3. Spray a pan with cooking spray. Cook the chickpea scramble in a frying pan over medium-high heat for about 5 minutes or until golden brown, stirring occasionally.

  4. Keep the chickpea scramble in a sealed container in the fridge for up to 5 days.

  5. Can cook the veggies to eat with the scramble, or eat them raw.

  6. Add nutritional yeast when eating!
