Bean, Potato, and Veggie Vegan Breakfast Hash

  • yellow potato, cut into cubes

  • Gardein beefless ground meat

  • mushrooms

  • red pepper

  • zucchini

  • canned black beans

  • salt

  • pepper

  1. Toss potatoes with salt and pepper, spread out on a parchment-lined baking sheet.

  2. Bake potatoes for 25 minutes. Flip them, put back in oven.

  3. Spray pan with cooking spray, add the rest of the veggies, beans and spices. Cook on medium heat.

  4. Once everything is cooked, combine it all into one bowl!
