Arugula with Roasted Salmon & Potatoes

  • baby arugula (or any lettuce)

  • salmon

  • potato

  • chives

  • Himalayan salt

  • dijon mustard

  • olive oil *can leave out and use cooking spray if you need

  • white wine vinegar

  1. Preheat oven to 450 degrees. On a large rimmed baking sheet, toss potatoes with 1 teaspoon oil, season with salt and pepper. Roast ten minutes.

  2. Cook salmon on pan with seasoning of your choice

  3. In a bowl, mix white wine vinegar and Dijon mustard.

  4. Combine all ingredients in a bowl. Can add dressing if eating immediately. If you're eating it later, can save dressing for later.
