Arugula with Roasted Salmon & Potatoes

baby arugula (or any lettuce)
-
salmon
-
potato
-
chives
-
Himalayan salt
-
dijon mustard
-
olive oil *can leave out and use cooking spray if you need

white wine vinegar

Preheat oven to 450 degrees. On a large rimmed baking sheet, toss potatoes with 1 teaspoon oil, season with salt and pepper. Roast ten minutes.

Cook salmon on pan with seasoning of your choice

In a bowl, mix white wine vinegar and Dijon mustard.

Combine all ingredients in a bowl. Can add dressing if eating immediately. If you're eating it later, can save dressing for later.
